Cac k·ru le nt ˈdʌːtən bæk Crack doo·tan bak ˈnahm. A Vietnamese dessert with condensed milk, beans, and rice flour that is steamed in a bamboo tube over simmering water until the rice forms a brittle crust and separates from the liquid. It is eaten hot or cold with sugar and coconut milk. The most common type of crack doo’tan bac nam is made with brown sugar, black beans, and glutinous rice flour. While crack doo·tan can be prepared by cooking the rice flour in a large pot and pouring the mixture into a bamboo tube, crack doo·tan bac nam is traditionally prepared in a tube which has been carved out of fresh bamboo. The freshly cut bamboo is then buried in sand and rice is placed inside to fill it. The rice is then mixed with sweetened condensed milk, black beans, and glutinous rice flour. The ingredients are then sealed inside the tube with wet paper or cloth and boiled over hot water until the mixture hardens into a brittle crust that will separate from the rest of the ingredients when it is turned out onto a plate. It can be eaten either hot or cold. When eaten warm, the crack doo·tan bac nam is usually cut into bite-sized pieces and dipped in a sweetened coconut milk or sugar syrup. In the cold version, the crack doo·tan is served with sugar and ice. While Vietnam has many street vendors cooking up this dessert, it is also popular in family-style restaurants around Hanoi, Saigon, and other cities. The Vietnamese word for crumbled rice cakes (or cracked rice cakes) is "tết ấm". "Cracked" is not a literal translation and it doesn't refer to the crackle of the hot liquid cracking the rice; it has nothing to do with "crack" products. The word for crack or crackling is "nên".How to Eat Crack Du Toan Bac Nam: 1. Get a cup of coconut milk on the side. 2. Dip some pieces into it and enjoy! 3. Add some more sugar on top if you like it sweeter, but not too much because you will lose some taste of coconut milk and sugar syrup within.
